Colorful Black Bean Salad
A great side dish for barbeques and potlucks! This recipe makes 9 ½ cup servings.
For the dressing, whisk together
- ¼ cup red wine vinegar
- 2 Tablespoons of olive oil
- 1 clove of minced garlic
For the salad, combine
- 1 15-ounce can of black beans (rinsed and drained)
- 1-1/2 cup of white corn
- 1 chopped red bell pepper (medium size)
- ¼ cup chopped fresh parsley (1 teaspoon dried parsley can be substituted)
Combine with dressing.
